Healthy Banana Pancakes

Lately, I have been craving pancakes, especially on the days when it has been really cold!! I have also been trying to be a little bit healthier this year, so pancakes are not really on the diet. I found a few recipes on Pinterest when I searched healthy pancakes and used those as inspiration and created my own recipe that’s so good! Its also so easy and you can change if you don like any of the ingredients.
What you need:
  • 2 big tablespoons of almond flour
  • 1 egg
  • 1 mashed up banana
  • 1 teaspoon of melted coconut oil
  • 1 tablespoon of almond butter
Optional Ingredients:
I have made these pancakes with the cinnamon and another time I made them with the chocolate chips and they were both sooo good! You can pretty much add anything to these you would add to normal pancakes. If you are trying to be healthier I would go with the blueberries over the chocolate chips lol!

Making these pancakes is literally the easiest thing ever because all you pretty much do is mix everything together. First I mash the banana because it’s easier to mash it alone before everything else is added to the bowl. Then add in the almond flour and egg, and I usually add the coconut oil and almond butter last. I put the coconut oil in a little bowl in the microwave for about 20 seconds or just until it is melted then add it in. I do not heat up the almond butter because the brand I use is not super thick, but if you get a thicker one it might be easier to mix it if you heat it up before you add it in.
Once everything is mixed together it is time to cook them! I turn the stove on low and put some coconut oil in a small pan so it won’t stick. This recipe makes about 3 medium sized pancakes, so I just pour an equal amount of batter for each of the pancakes. Once they start bubbling on the top I flip them over. Once they are flipped it only takes about 2-3 minutes on that side, and then they will be ready! I do not like syrup, it is just too sweet for me, but I melt a little bit of almond butter in the microwave and spread some on top and it’s so good. Even if you do like syrup this would be a good healthier option. Once I do that they are ready to eat! They are also super filling and I usually can’t eat them all, so if you need something that will keep you full for a while this is definitely the recipe for you.
